OK - load Zap, now bring up the menu on the Zap on the icon bar icon
and if I remember there is a menu option called 'create'; follow that
to its submenu where there is a 'Read disc' option.
Now select 'Read disc' and a window pops up. Fill in the 'filing
system' field at the top with ADFS (in capitals) and hit return.
Something should spin; you may have to change the drive number field
as appropriate (1 probably if its a 5.25" hung off it) - if so hit
return again.
Now you should see the number of sectors/track (9) sector length (256
bytes) number of tracks etc filled in; if they are OK then
hit the read disc button at the bottom of the window and let it hum.
You can then save the file out at the end.
Note: I can imagine that sometimes it will screw up and get the number
of tracks wrong).

Well the 360K is 40 track as far as I'm aware so it won't do your 80
track discs. I suspect the 1.2MB will do - but I think the A5000's
are different from my A410 so I don't know what cabling you need.
